While filming his new seriesFlavor Town Food Fightthat month, the beloved chef and Food Network mainstaytook a tumbledown a set of steps that left him in a wheelchair for eight weeks. But after a "trying holiday," Fieritold PEOPLEthat he's "doing better."

"You know what, you get some real appreciation for having the ability to just get up and walk around and do everything you used to," Fieri shared. "I'm a big CrossFit and hiking guy, so eight weeks of no hiking has driven me kind of crazy. But I'm looking forward to it, trying to take it easy."

Fieri went public with the details of the accident back in November, recounting that he "slipped down a set of steps and one foot went forward and the other foot got caught on the threshold."

The host of the Food Network classicDiners, Drive-Ins and Dives, who has gone on to appear on series likeRidiculousnessandRestaurant: Impossibleand host other programs likeGuy's Grocery GamesandTournament of Champions, joked that it "looked like I was probably doing the splits" as he fell. His right leg compressed into itself, he explained, which a doctor told him "he's never seen — you know, in 20 years — he hasn't seen a tear in the biggest, thickest part of your quad in half."

The injury first required Fieri to use a wheelchair. Then he was able to move to crutches, and now is (carefully) walking again.

"My doctors are all like, 'We know you want to get after it, but let's not go back to where we were.' And I'm like, 'We are never going back to that!'" Fieri told PEOPLE.

Playfulness aside, the celebrity chef called the accident "the worst thing I've been through in the last 20 years... But now I'll be up and ready and healthy and rolling by the time we hit the Super Bowl for sure."

In an interview withEntertainment Tonighton Tuesday, Fieri joked that the accident must be "some kind of mean prank that someone's playing on me, that I'm to not exercise and to be on crutches [and] in a wheelchair. I'm not kidding you, it was a pretty trying time. But you find it in yourself to get through."
